Bittersharp traditional English perry pear. Unknown origin, possibly from Norton Village, Gloucestershire, England, before 1886. Also known as Norton Butt.
Bittersharp with medium acidity and high tannin—everything you want for the perfect perry. Small (less than 2") yellow-green turbinate or roundish-obovate fruits ripen late. The old saying goes: “Gather your Butts one year, mill them the next and drink the year after.” You pick them in the late fall this year, press them in January and drink the perry the year after that. Best blended with other perry pears. Z4.
